So the other day I decided to make a beef stew- being that I am a one pot wonder of course! (of course-NOT I should say).

So in the freezer I find a wrapped pound or so of beef cubes-organic stew meat cubes. Hmmm...a hearty bunch of meat something a pack of hungry feral animals would KILL for, and you all know how I love my organics...

Well in the pot goes my usual- organic broth, some wine, onions, garlic, celery, parsnips, some corn, and some bay leaves. Cook and simmer for three plus hours. Given that I don't own an oven safe pot (yes I know-tsk tsk says Chef Brad...), it stayed on the stove top and I did a lot of stirring.

The soupy mixture turned out yummy-but the meat still had some chew. It was sorta soft but sorta stringy too. Shucks-the flavor was okay but the texture wasn't rocking my world. There just wasn't enough fat to make it right. A hunk of meat without some marbling calls for a lot of flossing after dinner.

Note to self: stay away from any cuts that are made for stews. As a novice with an inadequate supply of pots and pans, I'm just not cut out for anything tough. No, love me tender... and give me the chub!
