So many dishes, so much time

Being a self proclaimed "one pot wonder", I'm awesome at whipping together nice tasting meals that get eatened up by the family. However, there's often little left for leftovers and heavens forbid, someone doesn't like what this mama cooked up-there's no other option to enjoy. It's eat it or starve kiddo!
Now growing up in a very Chinese household (meaning Chinese food every night), my mom always managed to create multiple dishes. There was always the main dish-a pork, chicken or fish dish, and then various vegetables, rice and other assorted dishes. Sometimes there was an egg dish or something straight from a can. It wasn't a lot of complicated items (well, not that I know of), but there were at least five items on the table with leftovers weaving in and out.
 
My hubby has been bugging me to recreate this phenomenon. Esh. I guess he's not down with my one pot wonderfulness. Great, more dishes for me to cook. Yippee.
 
Okay, now for those who know me, you know that 1) I have a very deficiently supplied kitchen. It's not well stocked in much-food or pots and pans. 2) I don't have a lot of time on my hands-nor cash. I get home around 6:15PM people-not much time for a lot of prepping and fussing 3) I've got a slightly more complicated eating situation-a) it's got to be mostly organic and unprocessed and b) my hubby doesn't do most carbs (no rice, wheat, bread, millet, quinoa, beans or tofu).
 
As I said, esh.
 
Okay but I'm going to try my best. Improve, improve and improve. So, the meal plan for tonight is as follows: I've got some lemongrass chicken marinating since last night (check out Chef's Brad lemongrass recipe) and I think I may have some eggplant left for Thai basil eggplant. I can whip together some kind of makeshift omelet thing for the hubby (spinach, shrimp, onions and mushrooms) and a small salad. Jasmine rice and Banh Xeo will be for the kids (wish me luck Chef Brad) with leftover chicken jook soup.
 
If I can do that all-talk about a miracle!
 
Wish me luck people-I'm scared! (of all them damn dishes to wash.)
