Puerto Rican Dinner
Hi, I stayed with a family in Puerto Rico one January and the mom made a really delicious dish. She cooked eggs as if for an omelet, set it aside on a place, sliced plantains the long way and sauted them, put it on top of the egg, cooked green beans with some meat, spread that on top of the plantains and put another layer of egg on top. Then she sliced it in wedges like a pie. It was wonderful and I'd like to make it for my family. Does anyone know what kind of meat and seasoning would have gone in with the green beans and if this is a traditional recipe or something this famiy had invented?
