Ingredients
- Cookies
Flour — 2 1/2 cups
Baking powder — 1 1/2 teaspoons
Baking soda — 1/2 teaspoon
Ground cinnamon — 2 teaspoons
Ground cloves — 1/2 teaspoon
Ground nutmeg — 1/2 teaspoon
Salt — 1/2 teaspoon
Unsalted butter, room temperature — 1/2 cup, or 8 tablespoons
Brown sugar — 1 3/4 cups
Egg, beaten — 1
Vanilla — 1 teaspoon
Pumpkin puree — 1 cup
- Glaze
Powdered (confectioner’s) sugar — 2 cups
Milk — 3 tablespoons
Vanilla — 1 teaspoon
Ground cinnamon — 1/2 teaspoon
Directions
- Preheat oven to 350 degrees F. Mix the flour, baking powder, cinnamon, cloves, nutmeg and salt together in a large bowl.
- Using an electric mixer, cream the butter and brown sugar on medium-high until the sugar is well mixed incorporated and the mixture is light and fluffy. Reduce mixer speed to medium and add the egg and vanilla. Then add the flour mixture and the pumpkin puree, a third of each at a time and alternating between the two.
- Drop 2 tablespoon portions of the cookie dough onto a greased cookie sheet and bake for 15 to 20 minutes.
- While the cookies are baking, mix the glaze ingredients together to form a smooth, pourable mixture.
- Remove the cookies from the oven and cool completely. Use a spoon to drizzle the glaze over the cookies to coat.
Pumpkin Cookie Notes and Variations
- Stir 1/4 cup chopped walnuts or raisins to the dough after mixing in the flour and pumpkin.
