Hummus bi Tahini

(Middle Eastern chickpea & sesame dip)

Yield: 4-6 servings


INGREDIENTS PREP AMOUNT
Chickpeas cooked & drained 2 cups
Tahini (sesame paste) 1/4 to 1/2 cup
Lemon juice 1/4 cup
Garlic crushed 2-4 cloves
Salt   1/2 tsp
Water as needed
 
Olive oil 1/4 cup
Parsley minced 1-2 Tbsp

METHOD

  1. Place all ingredients into a food processor or blender and puree until very smooth. Add water as needed to achieve a soft, spreadable consistency. Adjust seasoning to taste. Add more lemon juice if necessary.
  2. Mound hummus in a serving bowl and pour over olive oil. Sprinkle with parsley and serve.

VARIATIONS

  • In Egypt 1-2 teaspoons of ground cumin are usually added.
  • Sprinkle with paprika for an additional garnish.

NOTES

  • Hummus is popular appetizer, or meze, throughout the Middle East. Serve with grilled or toasted pita bread cut into wedges.
