Souskaï de Mangues Vertes
(French caribbean mango appetizer)
Yield: 4-6 servings

| Garlic | minced | 1 clove |
| Pepper, jalapeño | minced | 1 each |
| Mango | not too ripe, peeled, cut into 1" cubes | 2 each |
| Limes | juice only | 2 each |
| Salt | to taste |
METHOD
- Mix all together well. Marinate at least 1 hour.
- Serve with toothpicks and cocktails.
NOTES
- This simple, healthy and lowfat fruit appetizer is particularly popular in the French Antilles.
