Fagioli all'Uccelletto
(Italian white beans with tomato & sage)
Yield: 4-6 servings

| Olive oil | 3 Tbsp | |
| Garlic | minced | 2-3 cloves |
| Sage, fresh or dried | minced or crumbled | 1 Tbsp or 1 tsp |
| Tomatoes | peeled, seeded, diced | 2 each |
| Cannellini or other white beans | cooked, rinsed | 2 cups |
| Salt & pepper | to taste |
METHOD
- Heat oil in a skillet or saucepan over medium high heat. Add garlic and sage and sauté just till garlic begins to brown.
- Add tomatoes and simmer over medium heat for about 10 minutes.
- Stir in beans and salt and pepper. Simmer another 10-15 minutes over low heat. Serve.
VARIATIONS
- If you don't have fresh tomatoes, substitute 1 cup of canned tomatoes.
- Add some mild Italian sausages at the same time you add the beans. Simmer till they are cooked through for an Italian version of pork and beans.
NOTES
- This comforting dish originates in the Tuscan town of Siena. It is traditionally served with pork liver, but goes with a variety of boiled or braised meat dishes.
