Fagioli all'Uccelletto

(Italian white beans with tomato & sage)

Yield: 4-6 servings


INGREDIENTS PREP AMOUNT
Olive oil 3 Tbsp
Garlic minced 2-3 cloves
Sage, fresh or dried minced or crumbled 1 Tbsp or 1 tsp
Tomatoes peeled, seeded, diced 2 each
Cannellini or other white beans cooked, rinsed 2 cups
Salt & pepper to taste

METHOD

  1. Heat oil in a skillet or saucepan over medium high heat. Add garlic and sage and sauté just till garlic begins to brown.
  2. Add tomatoes and simmer over medium heat for about 10 minutes.
  3. Stir in beans and salt and pepper. Simmer another 10-15 minutes over low heat. Serve.

VARIATIONS

  • If you don't have fresh tomatoes, substitute 1 cup of canned tomatoes.
  • Add some mild Italian sausages at the same time you add the beans. Simmer till they are cooked through for an Italian version of pork and beans.

NOTES

  • This comforting dish originates in the Tuscan town of Siena. It is traditionally served with pork liver, but goes with a variety of boiled or braised meat dishes.
