Pisco Sour

(Chilean-Peruvian brandy cocktail)

INGREDIENTS PREP AMOUNT
Pisco brandy 6 oz
Lemon juice   2 oz
Ice cubes 4-6 each
Egg white 1 each
Sugar, superfine 1-2 Tbsp

METHOD

Basic Steps:  Mix → Chill → Sauté
  1. Add the pisco, lemon juice and ice cubes to a bar shaker.
  2. Beat the egg white and sugar together to dissolve the sugar. Add to the bar shaker and shake vigorously 9-12 times.
  3. Strain into chilled cocktail glasses and enjoy.

VARIATIONS

  • Use lime juice instead.
  • Use more or less sugar if you like. Or substitute simple syrup.
  • Add a dash or two of angostura bitters to each drink.

NOTES

  • Pisco is a type of brandy made from muscat grapes that is found in Peru and Chile. Although it is named after a town in Peru, both countries claim the pisco sour as their national drink.
