Apple Cake

INGREDIENTS PREP AMOUNT
Butter softened 1/2 cup
Sugar 1 cup
Egg lightly beaten 1 each
 
Flour 1 cup
Baking Soda 1 tsp
Cinnamon 1 tsp
Nutmeg   1/2 tsp
     
Apples, large, tart for cooking peeled, cored and chopped 2 each
Walnuts (opt.) lightly chopped 1/2 cup

METHOD

Basic Steps:  Cream → Beat → Fold → Bake
  1. Preheat oven to 350°. Cream butter and sugar well in a mixer till fluffy. Add egg and beat in well.
  2. Mix dry ingredients together well, then stir gently into wet ingredients till mixed in. Do not over beat. Stir in apples and nuts.
  3. Pour into a buttered 9" cake pan and bake for 30-40 minutes till toothpick comes out clean amd topped is browned. Cool and serve with whipped cream.

VARIATIONS

  • Add a little lemon zest along with the apples a walnuts if you like.
  • Sprinkle a tablespoon of sugar over the top of the cake for more of a glazed surface.
  • Use pears instead of apples.

NOTES

  • Apple cake is popular throughout the United States, especially during the fall when the new apple harvest is coming in. This is an easy, moist, rich cake that really hits the spot.
