Matzo Brei
(Jewish/Israeli fried flatbread & eggs)

METHOD
Basic Steps: Soak → Mix → Sauté
- Hold matzos under running water for 5-10 seconds and then set aside to soften for 1-2 minutes.
- Beat eggs and salt together in a large bowl. Break matzo into small pieces and stir into eggs.
- Heat a skillet over medium flame. Add oil. Add matzo mixture and brown on one side. Flip and brown on other side. Serve with garnishes suggested below.
VARIATIONS
- Add a bit of cinnamon and sugar to the beaten eggs and serve with honey, applesauce or jelly.
- For a savory version, add 1/4 cup grated onion and some pepper to the beaten eggs. Serve with a dollop of sour cream.
- Experiment with different additions. Add raisins to sweet matzo brei, or add cooked asparagus tips or chopped scallions to the savory version. Use your imagination.
NOTES
- Matzo brei (pronounced MAHT-zuh bree, or MAHT-zuh breye) is a good way to use up leftover matzot after Passover, and is a favorite of kids.
- Every family has their own way of making this dish. The biggest dispute seems to be whether sweet or savory is best. I'll leave it up to you to decide.
