Mizeria
(Polish cucumber & sour cream salad)
Yield: 3-4 servings

| Cucumber | peeled, halved lengthwise, seeds removed and thinly sliced | 1-2 each |
| Salt | 2-3 tsp | |
| Sour cream | 1/2 cup | |
| Lemon | juice only | 1/2 each |
| Dill, fresh | chopped | 2 Tbsp |
| Salt & pepper | to taste |
METHOD
Basic Steps: Salt → Rinse → Mix
- Mix the cucumber and salt together in a large bowl. Let set 15-20 minutes. Rinse cucumbers in a colander to remove excess salt and squeeze dry. This step removes excess moisture from the cucumbers.
- Mix cucumbers with the rest of the ingredients and adjust seasoning. Serve well chilled.
VARIATIONS
- Substitute yogurt for some or all of the sour cream if you like.
NOTES
- This is a nice cooling summer salad that is very popular in Poland.
