Mizeria

(Polish cucumber & sour cream salad)

Yield: 3-4 servings


INGREDIENTS PREP AMOUNT
Cucumber peeled, halved lengthwise, seeds removed and thinly sliced 1-2 each
Salt 2-3 tsp
 
Sour cream 1/2 cup
Lemon juice only 1/2 each
Dill, fresh chopped 2 Tbsp
Salt & pepper to taste

METHOD

Basic Steps:  Salt → Rinse → Mix
  1. Mix the cucumber and salt together in a large bowl. Let set 15-20 minutes. Rinse cucumbers in a colander to remove excess salt and squeeze dry. This step removes excess moisture from the cucumbers.
  2. Mix cucumbers with the rest of the ingredients and adjust seasoning. Serve well chilled.

VARIATIONS

  • Substitute yogurt for some or all of the sour cream if you like.

NOTES

  • This is a nice cooling summer salad that is very popular in Poland.
