| Shallots | sliced very thin | 2 each |
METHOD
Basic Steps: Mix
- Mix the hot water and sugar to dissolve the sugar. Add the vinegar and salt and taste for balance of flavors.
- Quarter the cucumber lengthwise, then slice thinly. Place the cucumber, peanuts and shallots in a bowl. Pour the vinegar-sugar mix over all and let set 30 minutes to blend flavors.
VARIATIONS
- Add some chopped cilantro of you like.
- One or two minced Thai chilies, or a little sriracha chile paste can be added for some heat.
NOTES
- Arjard is traditionally served with tod mun khao pad (corn fritters) and other fried foods as a dipping sauce.
