Arjard

(Thai cucumber dipping sauce)

Yield: About 1 cup


INGREDIENTS PREP AMOUNT
Water, hot 1/4 cup
Sugar 1/4 cup
Rice vinegar 2 Tbsp
Salt 1/2 tsp
 
Cucumber peeled and seeded 1 each
Peanuts roasted and chopped 1/2 cup
Shallots sliced very thin 2 each

METHOD

Basic Steps:  Mix
  1. Mix the hot water and sugar to dissolve the sugar. Add the vinegar and salt and taste for balance of flavors.
  2. Quarter the cucumber lengthwise, then slice thinly. Place the cucumber, peanuts and shallots in a bowl. Pour the vinegar-sugar mix over all and let set 30 minutes to blend flavors.

VARIATIONS

  • Add some chopped cilantro of you like.
  • One or two minced Thai chilies, or a little sriracha chile paste can be added for some heat.

NOTES

  • Arjard is traditionally served with tod mun khao pad (corn fritters) and other fried foods as a dipping sauce.
