Piaz ka Chatni

(Indian onion chutney)

Yield: About 2 cups


INGREDIENTS PREP AMOUNT
Onion sliced thin 2 each
Chile peppers seeded, chopped 1-3 each
Tomato peeled, seeded, chopped 1 each
Lemon juice 1-2 Tbsp
Paprika 1/2 tsp
Cumin, ground 1/2 tsp
Cayenne pepper (opt.) 1/4 tsp
Salt to taste

METHOD

Basic Steps:  Blend
  1. Rinse and squeeze the onions under running water for about 30 seconds.
  2. Mix with the rest of the ingredients and pulse in a food processor until well blended but still chunky.

VARIATIONS

  • If you don't have a food processor, just mince the onions, peppers and tomatoes. Then mix all the ingredients well.
