Sausage Gravy
(American white sauce with sausage)
Yield: 4-6 servings

| Oil or butter | 2 Tbsp | |
| Onion | minced | 1 each |
| Breakfast sausage | 1 lb | |
| Flour | 1/4 cup | |
| Milk | 3 1/2 cups | |
| Sage, fresh or dried | minced or crumbled | 1T or 1 tsp |
| Parsley (opt.) | minced | 1 Tbsp |
| Tabasco (opt.) | 2-4 shakes | |
| Salt & pepper | to taste |
METHOD
Basic Steps: Mix → Chill → Sauté
- Heat oil or butter in a large saucepan or skillet over medium heat. Add onion and sauté till translucent.
- Add sausage and sauté till cooked through, breaking up with spatula till thoroughly crumbled.
- Add flour and stir in well to get rid of any lumps. Let cook through for a couple of minutes over medium-low heat, stirring constantly.
- Add milk all at once and whisk in well with a fork. Add the rest of the ingredients. Bring to a boil and let simmer on low for about 10 minutes.
- Adjust seasoning and serve over buttermilk biscuits or toast.
NOTES
- When served with baking powder biscuits, this sauce becomes the famous and beloved Southern breakfast dish "biscuits and gravy".
