METHOD
Basic Steps: Mix → Knead → Rest → Portion → Roll out → Pan bake
- Mix salt into the cassava flour. Stir in enough water to make a stiff dough. Cover and set aside to rest for at least 30 minutes.
- Cut dough into 6 equal portions. Dust a countertop with some cassava flour, and roll each portion out into 6" rounds.
- Heat a greased skillet over medium flame. Cook each round for 3-5 minutes on each side till browned. Serve warm.
NOTES
- Bammie is descended from the bread eaten by Jamaica's original inhabitants, the Arawaks. It is rarely made from scratch these days and is usually bought from a local vendor.
