Bubble & Squeak

(English fried potatoes & cabbage)

Yield: 3-4 servings


INGREDIENTS PREP AMOUNT
Potatoes peeled, cooked, mashed roughly 3-4 each
Cabbage cooked & shredded 1 small head
Salt & pepper   to taste
 
Butter, oil or bacon fat   3-4 Tbsp
Onion chopped 1 each

METHOD

Basic Steps:  Mix → Sauté → Brown
  1. Mix the potatoes and cabbage together well in a bowl.  Season with salt and pepper.
  2. Heat the butter or oil in a heavy skillet over medium-high heat. Sauté the onion till translucent. Mix in the potato-cabbage mixture and press down into the skillet.
  3. Let cook on medium heat till bottom is browned, about 10 minutes. Then turn potatoes to brown on the other side.

VARIATIONS

  • Add diced ham or chopped sausages to the potato mixture.
  • Often Brussels sprouts are used instead of cabbage.
  • Can be baked in the oven to cut down on the fat. Just sauté the onions in 2 Tbsp of fat, mix with the potato-cabbage mixture and press into a baking dish. Bake at 350º till browned on top.

NOTES

  • Bubble & squeak gets its name from the sound it makes as it is cooking. It is a popular breakfast or supper dish in England. Serve with bacon and eggs.
  • It is necessary to use a fair amount of fat in this dish to make the potatoes brown properly. Nobody said it was heart-friendly.
