Bubble & Squeak
(English fried potatoes & cabbage)
Yield: 3-4 servings

| Potatoes | peeled, cooked, mashed roughly | 3-4 each |
| Cabbage | cooked & shredded | 1 small head |
| Salt & pepper | to taste | |
| Butter, oil or bacon fat | 3-4 Tbsp | |
| Onion | chopped | 1 each |
METHOD
Basic Steps: Mix → Sauté → Brown
- Mix the potatoes and cabbage together well in a bowl. Season with salt and pepper.
- Heat the butter or oil in a heavy skillet over medium-high heat. Sauté the onion till translucent. Mix in the potato-cabbage mixture and press down into the skillet.
- Let cook on medium heat till bottom is browned, about 10 minutes. Then turn potatoes to brown on the other side.
VARIATIONS
- Add diced ham or chopped sausages to the potato mixture.
- Often Brussels sprouts are used instead of cabbage.
- Can be baked in the oven to cut down on the fat. Just sauté the onions in 2 Tbsp of fat, mix with the potato-cabbage mixture and press into a baking dish. Bake at 350º till browned on top.
NOTES
- Bubble & squeak gets its name from the sound it makes as it is cooking. It is a popular breakfast or supper dish in England. Serve with bacon and eggs.
- It is necessary to use a fair amount of fat in this dish to make the potatoes brown properly. Nobody said it was heart-friendly.
