Sigumchi Namul
(Korean sesame spinach salad)

| Oil | 2 Tbsp | |
| Sesame seeds | 2 tsp | |
| Garlic | minced | 2-3 cloves |
| Spinach | stemmed, washed & drained | 1 large bunch |
| Soy sauce | 2 Tbsp | |
| Salt & pepper | to taste | |
| Sesame oil | 1-2 tsp |
METHOD
- Heat oil in a skillet or wok over medium heat. Add sesame seeds and stir fry for about 30 seconds till lightly browned. Add garlic and stir fry for 30 seconds more till just starting to brown.
- Add spinach in batches, stirring to wilt. As soon as all spinach has wilted, remove from heat. Cool then squeeze out excess liquid.
- Toss with remaining ingredients, adjust seasoning and serve at room temperature.
VARIATIONS
- The spinach can also be steamed in a little water instead of stir frying.
- Stir in 1 Tbsp of white vinegar with the other ingredients.
NOTES
- Sigumchi namul is a simple and typical side dish to a Korean meal.
