Picado de Rábano Recipe

Picado de Rábano

(Guatemalan radish salad)

Yield: 4-6 servings


INGREDIENTS PREP AMOUNT
Radishes trimmed, sliced in thin rounds 1 lb
Mint chopped finely 1/4 cup
Orange juice 1/2 cup
Lemon juice 1/4 cup
Salt and pepper to taste

METHOD

Basic Steps:  Mix → Chill
  1. Mix all together and chill well.

VARIATIONS

  • Use bitter orange juice in place of the orange and lemon juices if you can find it.
  • Chojin: Stir in 2 cups of chopped chicharrones (fried pork rinds).

NOTES

  • Serve as a refreshing side salad for Guatemalan meals.
