Sausage Gravy
(American white sauce with sausage)
When served with baking powder biscuits, this sauce becomes the famous and beloved Southern breakfast dish "biscuits and gravy." It's equally tasty served over mashed potatoes or toast.
4-6 servings
- Oil or butter -- 2 tablespoons
- Onion, minced -- 1
- Breakfast sausage -- 1 pound
- Flour -- 1/4 cup
- Milk -- 3 1/2 cups
- Fresh or dried sage, chopped or crumbled -- 1 tablespoon (fresh) or 1 teaspoon (dried)
- Parsley (optional), minced -- 1 tablespoon
- Tabasco or other bottled hot sauce (optional) -- 2-6 drops
- Salt and pepper -- to taste
Method
- Heat oil or butter in a large saucepan or skillet over medium heat. Add onion and sauté till translucent.
- Add sausage and sauté till cooked through, breaking up with spatula till thoroughly crumbled.
- Add flour and stir in well to get rid of any lumps. Let cook through for a couple of minutes over medium-low heat, stirring constantly.
- Add milk all at once and whisk in well with a fork. Add the rest of the ingredients. Bring to a boil and let simmer on low for about 10 minutes.
- Adjust seasoning and serve over buttermilk biscuits or toast.
